French Bean & Tomato Salad with Lemon Dressing
Ingredients
- 200 g French beans, rinsed and steamed
- 2 tomatoes, finely chopped
- ¼ cup roasted peanuts, for the garnish
For the Dressing
- Juice of 1 lime
- ¼ tsp finely grated ginger
- 1 clove garlic, minced
- Unrefined salt to taste
- Black pepper powder to taste
Method
Mix the French beans and tomatoes in a bowl. Keep aside. Mix together all the ingredients for the dressing. Pour over the salad. Garnish with the peanuts and serve.
