Coconut Lime Cheese Cake (Raw)
Even cheesecake can be made without dairy and sugar!! Do try this delicious recipe.
Ingredients for the Crust
- 1 cup raw almonds
- ½ cup shredded unsweetened coconut (desiccated coconut)
- ½ cup dates, pitted
- ½ tsp vanilla extract
- ⅛ tsp unrefined salt
Ingredients for the Filling
- 1 cup coconut/cashew/ almond milk
- 2 cups raw cashew nuts, soaked for 3-4 hours in double the quantity of water, drained and rinsed
- ½ cup date paste
- ⅔ cup fresh lime juice
- ⅛ tsp unrefined salt
- 2 tsp vanilla extract
- ¼ cup coconut butter
Ingredients for the Garnish
- 1 tbsp shredded coconut (desiccated coconut)
- 1 tsp lime zest
- 1 lime, sliced (optional)
Method
To prepare the crust, in a food processor pulse the almonds and coconut together into a fine flour. Add the dates, vanilla extract and salt. Pulse again a few times, until the mixture begins to clump together. Transfer to a parchment lined 9″ springform pan, spread out evenly and press down firmly. Place in the refrigerator to set, while you prepare the filing.
In a blender, place all the filling ingredients and blend until smooth.
Pour the filling into the prepared crust and refrigerate for at least 2 hours before serving. Garnish with shredded coconut, lime zest and lime slices (if using).
Storage/Shelf Life
In the refrigerator for 2-3 days.
Note
This recipe uses many nuts. Please keep your nut limit in mind if you are working on disease reversal.

Dairy spells Disease
Dairy is a part of our culture and unfortunately so is disease. Few people understand how these are linked. Here are a few diseases that are directly linked to dairy.
1. Type 1 Diabetes
Research has shown that children who have been exposed to dairy milk at a young age are more likely to have type I diabetes than their counterparts who were raised on breast milk.

2. Type 2 Diabetes
Milk contains fat and lacks fibre, resulting in a rise in intramyocellular lipids. This causes insulin resistance. Stopping all dairy often results in a dramatic drop in blood sugar levels.

3. Hormonal problems
All our hormones are orchestrated by the pituitary gland. When one hormone goes out of balance other hormones also get affected. Dairy is full of hormones since it’s the secretion of a female mammal. It contains growth hormones, estrogens, progesterone, prolactin, oxytocin and so on and therefore promotes hormonal problems like diabetes, hypothyroidism, premature puberty, PCOD, infertility, prostate enlargement, hirsutism, as well as breast, prostate and ovarian cancers.

4. Coughs, colds, sinus
Both Ayurveda and naturopathy recognise milk as mucus forming. Almost everyone who stops consuming dairy will see, after an initial cleansing reaction, that colds, coughs and sinus problems disappear or become less frequent.

5. Acne
Most people notice that their skin becomes soft, clear and even glows after stopping dairy. Initially, though, there can be a cleansing period where the skin temporarily breaks out.

6. Cancers
The milk protein, casein causes tumour growth and is a known carcinogen. Milk also contains growth hormones and proteins. Proteins are the food for growth and cancers are growths. There is a clear connection. Ovarian, breast and prostate cancers are hormone dependant cancers and are promoted by the hormones in dairy.

7. Constipation, digestive issues
All animal products including dairy lack fibre. Fibre cleanses the intestines and is necessary for easy bowel movement. Lack of fibre causes constipation and the absorption of toxins; and this can lead to colon and rectal cancers.

8. Acidity
High protein foods cause excess acid secretion in the stomach leading to acidity. Contrary to popular belief, stopping dairy actually helps reverse acidity and ulcers. The conventional home remedy, cold milk, may neutralise the acid temporarily but ends up maintaining the cycle of acidity.

9. Obesity
Milk is the food for a calf to grow into its full size in just 18 months! It’s replete with growth hormones. One of the biggest causes of the obesity epidemic so prevalent today is the consumption of dairy in concentrated forms, such as cheese, paneer and sweets.

10. Asthma and Allergies
Stop dairy and other high proteins and watch allergies gradually disappear in months!

11. Stress and Anxiety
In order to produce dairy, cows are repeatedly made pregnant and their babies taken away from them. They are often kept confined in extremely stressful conditions. This causes adrenaline secretion, which ultimately ends up in our bodies and fills us with stress and anxiety too.
